Recipe of the Week: Chicken and Avocado Quesadillas

Just what you want when time is tight and you are constantly on the go.

 

Chicken and Avocado Quesadillas

Makes 12 large quesadillas

Serving Size: 1 Quesadilla

2 bags Trader Joe's Just Chicken, defrosted 2 cups Mexican cheese blend, ( or mozzarella) 4 avocado diced 4 tablespoons cilantro chopped

1 8 oz can diced green chiles

12 strips cooked bacon, diced or crumbled 12 large tortillas

  1. Mix the chicken, cheese, cilantro, green chiles and the diced avocados.

  2. Lay one tortilla in a skillet over medium heat and add the chicken mixture to one half.

  3. Top with crumbled bacon and additional cheese if desired.

  4. Fold empty half of tortilla over mixture and press firmly with spatula.

  5. Once crisp on the bottom, flip quesadilla over by inserting turner under the open side and rolling over the closed side so you don't lose any fillings.

  6. Crisp other side and place on a cooling rack to maintain crispness.

  7. Serve with salsa and sour cream.
