Recipe of the Week: Chicken and Avocado Quesadillas

Chicken and Avocado Quesadillas
Makes 12 large quesadillas
Serving Size: 1 Quesadilla

2 bags Trader Joe's Just Chicken, defrosted 2 cups Mexican cheese blend, ( or mozzarella) 4 avocado diced 4 tablespoons cilantro chopped
1 8 oz can diced green chiles
12 strips cooked bacon, diced or crumbled 12 large tortillas
- Mix the chicken, cheese, cilantro, green chiles and the diced avocados. 
- Lay one tortilla in a skillet over medium heat and add the chicken mixture to one half. 
- Top with crumbled bacon and additional cheese if desired. 
- Fold empty half of tortilla over mixture and press firmly with spatula. 
- Once crisp on the bottom, flip quesadilla over by inserting turner under the open side and rolling over the closed side so you don't lose any fillings. 
- Crisp other side and place on a cooling rack to maintain crispness. 
- Serve with salsa and sour cream.
